I've canned jams and jellies my entire life, why didn't I think of this earlier? All I had to do was toss the grapes into a stock pot add water and cook for about 30 minutes, strain through a fine sieve and then add some sugar and pectin. That's it! I hate waste! Of course, the best thing to do with fresh grapes is to make homemade grape jelly, duh! They eventually get tossed into the recycle bin and I walk away filled with buyer's remorse. Sadly, I usually shove the bag into the crisper drawer and forget they're in there until they become shriveled up raisins or worse, molded raisins. The question is, what to do with the sour grapes your family won't eat? One option: return them to the store for money back guarantee. This homemade grape jelly recipe is easy to make, and will be the star of your canning pantry!ĭespite that California grows grapes by the ton, we still pay a hefty price for the little buggers. Pour into a sieve and press juice through with the back of a spoon. If you feel lazy, just pulse the berries a few times in your food processor, but this will release more tannins into the juice. Turn your stove off and crush your berries with a potato masher. Heat the liquid till just warm (don’t boil). Wash them and then put them in a pot with ¾ cup water. Pick 4 cups Oregon grape berries whole cluster. Pour into sterilized jam jars, seal and put in fridge. Stir and boil until you reach the gel point (instructions are in the currant jelly video and in the recipe pdf) and the jelly sheets off a wooden spoon. Stir in 1 ounce commercial pectin, then bring to a rolling boil. ½ oz commercial pectin or you can experiment with using lemon rind instead for pectinīoil Juice.The basic ratio of sugar to Oregon grape juice is about 1:1 unless you have a sweeter or less sweet palate.
